This one is easy and yummy! From a cookbook called "Not Your Mother's Slow Cooker Recipes."
Ingredients:
1 chopped yellow or red onion
4-6 chicken breasts (I put mine in frozen) If you only want a meal for 2, put in 2-3 chicken breasts and half the recipe.
2 15 oz. can of diced tomatoes with basil, garlic, oregano (or add these to taste)
1 cup of port wine or chicken broth
4 Tbsp. of lemon juice
2 bay leaves
1/2 tsp. red pepper flakes (if you like spice)
salt
pepper
20-30 medium size frozen shrimp (thawed/tails removed)
1 small jar artichoke hearts (chopped)
noodles or rice (cooked according to package)
crumbled feta cheese
Put the onions in the bottom of the crockpot, then the chicken. In a bowl, mix the tomatoes, wine, lemon juice, bay leaves, red pepper flakes, salt, and pepper, and pour over top of the chicken. Cook on low for 6 hours (or if your crockpot is as hot as mine, 4 hours will be fine!) Half an hour before eating, stir in the shrimp and chopped artichoke hearts. Serve over cooked noodles or rice with crumbled feta sprinkled on top.

It is one of my husband's faves and so easy! Tastes like a fancy meal, too. I usually do the 4 chicken breasts just to have leftovers.
